Zucchini stew


This is a favourite of mine, it´s so delicious!


1 onion diced

3 cloves garlic minced

1/2 zucchini cut into pieces

olive oil

1 teaspoon green curry paste

400 gram coconut cream

1 1/2 cups water

1 stock cube

2 tablespoons tomato paste

1 cup red lentils

some grated ginger

squeesed lemon juice



Heat olive oil in a heavy bottomed pot and add the onion, garlic, zucchini and green curry paste. Saute until vegetables are almost soft. Add  coconut cream, water, stock cube, tomato paste, lentils and grated ginger. Cook for about 15-20 minutes, until lentils are soft. Add some squeezed juice from a lemon and stir.

Serve with pasta.
